The Chicken (part 2)

Okay... so I am done making my chicken Kosher (soaking it in Kosher Salt and water). So after the soaking process, I was instructed to rinse it off and dry it.

Pause.

So, have you ever held a whole chicken in your hands? I know all of you cooks out there have. So maybe I am just coming off extremely naive. But here's the thing. I don't not eat meat because for the sake of the animal (although I am an animal lover)...the real reason is I have problems digesting it. However, holding that little chicken in my hands is making me rethink a few things. It's just so real. I mean...little legs...little wings...AAGh...I feel awful.

Unless this chicken is just the best tasting meal I've ever had tonight, I'm for sure not buying the whole chicken again. It's too gross and just too sad. It's back to the chicken breasts where there is no emotional conflict or gizzards involved. Or...it's giving up chicken altogether.

Kristi, I'm here to tell you, if you grew up with chickens...the live kind...you would have no emotional attachment to the little critters...so enjoy your dinner! It sounds delicious!

oh yea...and my Grandma tells a story about how her brother was gravely ill, as a little boy, and was nursed back to health with chicken gizzard broth. So there you go, it has medicinal value as well!

Kristi, your great-grandma Porter L-O-V-E-D the gizzard. It was really the only part of the chicken she truly enjoyed eating. I could never understand it.

I'll always remember when I was a kid on vacation in Illinois and one of my aunts--your aunt, too--hung 2 or 3 chickens close together on the clothesline. Then with one wide swing of a hatchet she cut their heads off. It was kinda traumatic for me--but fascinating at the same time. It would REALLY have been interesting if they'd not been hanging. That old saying "running around like a chicken with its head cut off" is really true. If they're not anchored down, their bodies keep moving as they bleed out.

We raised chickens in a coop behind our house when I was a kid in Oregon. Oh...the fun stories I can tell (but won't for your sake.) Needless to say, I've never had trouble working with chicken--I even worked at KFC and volunteered to help the cooks.

And yes, people do eat the gizzards but generally those of the older persuasion. My GiGi loved them fried.

Older persuasion...as in older people...not chickens. I needed to clarify that.

I am 100% with you. I love chicken...but only the kind that comes in the plastic bag and says chicken breast or chicken tenderloins on it. You are braver than I am for even attempting it.

I was laughing out loud at your stories! That's the other thing I was going to do for you today - get that recipe for chicken in the brown paper bag. But I'm guessing you won't be needing it for awhile!

I guess I forgot to teach you how to clean and cut a chicken. Oops. Maybe another day...

I'm glad your chicken turned out yummy, though. I'm sure the whole family enjoyed it.
